Our panettone has a 72-hour processing in which the most important phase is in the operation of refreshing a yeast that always keeps alive. By working it with flour and water we make sure that it remains reactive, giving softness and taste to the product. To give a strong connotation to the taste of the panettone, chocolate chips with coffee have been blended into the dough, all enriched with a cream with a coffee flavor. It is then combined with a sachet of powdered sugar to give more sweetness to everything.
