Estratto di Pomodoro is a concentrated tomato paste or as Sicilians refer to as "strattu". A great estratto requires an intense summer heat and extreme patience, because the pulp of the tomatoes must be stirred for hours by hand to evaporate all of the liquids. The island of Sicily offers up plenty of hot summer heat and Tudia adds extreme patience and tradition to the whole process. This thick paste has a deep, burgundy color and the flavor is sweet and intense yet open. A little bit goes a long way!
INGREDIENTS: tomatoes 95%, extra virgin olive oil 3%, salt, pepper.
USE: to be reconstituted with water or tomato puree to obtain a ready made sauce. Add variable amounts in sauces, soups and in any other dish in which the use of tomatoes is requires.
The product contains neither preservatives nor dyes nor thickeners and in any case no other substance besides the declared ingredients.
