Still largely unknown to the public, sulla honey is harvested in Campania, Calabria and Sicily. With a delicate and sweet taste, it suits well to replace the more common acacia and citrus. Honey ideal to accompany a rich and energetic breakfast spread on slices of bread with butter, to be used in the preparation of cakes and pies and in combination with cheeses.

Sulla  honey by Scyavuru is a particularly valuable Italian product. It is obtained from the homonymous plant which is characterized by large red flowers, and is typical of central and southern Italy. Produced by bees obtained through different processing steps, elimination of the wax layer by uncapping; extraction from the cells and subsequent purification of the thinnest layers of wax and any impurities. Finally, for a period of time that depends on the viscosity and temperature of the honey, it is decanted to move on to the final potting phase.

How to eat: To accompany a rich and energetic breakfast spread on slices of bread with butter. To be used in the preparation of cakes and pies and in combination with cheeses.

Properties and characteristics: The honey of Sulla takes its name from a particular herbaceous plant widespread throughout the Mediterranean area, from which the bees collect the pollen. The Sulla plant belongs to the Leguminosae family and is widespread in large areas of the Italian territory, mainly in Central and Southern Italy.

Best honey

Of course, I haven’t tasted ALL honeys of the world. But Sulla from Italy is my favorite. Here in Washington state, we don’t have much variety- wildflower, clover, Manuka that comes from somewhere else. I’m so happy to find a source of Sulla! My daughter and I are going to do a honey tasting for a few women friends soon, so we’re collecting honeys. I’ll bake Lavender Shortbread cookies for thé party, maybe some others with flowers! Fun!
