This baccala cod is a type of traditional salted cod from Italy. Since a large amount of salt is added to preserve it, it is necessary to rinse off the salt, then soak it in cold water for 12 hours (or slightly more depending on the thickness of the fillet) before using it in a recipe. Baccala is also part of a traditional Italian Christmas Eve meal, the Feast of the Seven Fishes.
After it's soaked, this cod fish can be used in a wide range of Italian, Spanish, and Greek dishes. Lightly fried cod fillets can be used to prepare a fish piccata. Baked cod with lemon and garlic makes a delicious evening meal. This Italian white fish can even be tossed in pastas with tomato sauce and spicy red pepper flakes. Best paired with a bottle of white wine.
