Cooked must of the grapes are then aged for four years in oak barrels to enrich its sweet-sour aroma and flavor.  Its rich flavor is excellent for meats, deserts, dressings, fruits, vegetables, and much more.  Vincotto is an excellent vinegar for Italian cooking and Italian recipes
