Our panettone is crafted through a 72-hour process, in which the most important phase is the refreshing of the sourdough starter — this keeps it alive and active. By working it with flour and water, we ensure it remains reactive, giving the product its signature softness and flavor.
The raisins come from Turkey, chosen for their exceptional quality: the grapes are hand-picked, naturally sun-dried, and carefully selected for their color and size. They are then soaked for two days in Moscato d’Asti D.O.C.G. from the Pico Maccario winery.
Unlike other versions, this traditional recipe does not include any syrup soak, resulting in a sweet, delicate, and naturally leavened dessert.
