Auricchio Provolotini is a younger Auricchio provolone cheese with a relatively mild flavor. Made by using traditional, old world Italian techniques, this stretched-curd provolone is hung from a rope to dry and left to mature.
On its own or as part of a cheese board, Auricchio Provolotini is ready to eat. This semi-soft cheese from cow's milk is best paired with fresh or dried fruit and mild cured meats such as certain salamis.
